EXPLORATORY CASK SERIES - Kiona Cask
A rare release that we started back in 2018 while working with Kiona Vineyards on a special barrel project. We were lucky to be able to work with Kiona Vineyards on procuring some of the rarest vintages from the Old Block section of their vineyards, the very first vines grown in what is now the Red Mountain AVA. Famed for their cabernet sauvignon, about every year or so Doc’s head blender drives to Kiona vineyards and picks up these freshly dumped Old Block cabernet casks and drives through the night to Doc’s rickhouse where they are promptly filled with Doc’s signature bourbons.

NOTES: This release is the second we have done and one of our favorite releases under the Exploratory Cask line to date. Bottled in limited quantities, only two casks were released this year (2021).
SENSORY NOTES:
Nose: Dark stone fruits, tart cherries, soft licorice, cabernet wine and toasted vanilla
Palate: Dark chocolate covered brandied cherries (mon cheri), baking spice, apple pie filling and toasted almonds
Finish: Full-bodied bourbon with deep flavors of mon cheri cherries, marzipan and crème brûlée

BATCH NOTES: Finished in: Red Mountain Cabernet Sauvignon Casks | Mash-Bill: 84% Corn, 8% Rye, 8% Malted Barley
TASTING NOTES: Ripe red cherries on the nose with oaky undertones and backed with a hint of pie crust. Classic Tennessee whiskey characters from toasted vanilla, rich blackberries to earthy cigar box and dry minerals.
