MASH BILL CHANGE: BATCHES 21-004 AND 21-005 WILL CHANGE

Batches/Release# 21-004 and 21-005 are the last two releases that had the original blend of 36% Rye Bourbon blended with the 21% Rye Bourbon for the base blend. Starting with Release# 21-006 Jesse, Doc’s Blender, will be getting a little heavier handed with the 36%! 21-004 and 21-005 are both on the shelf in select markets.  

If you’re lucky enough to find both make sure to hold onto a dram or two of each to compare the next release of batch 21-006! A couple more notes that might be evolving in each of these batches: Doc’s Alter Ego Solera Aged Rye- 21-005 is the first release from a new ‘rick’ style for the Solera.  We were able to create a more vertical stack, that, mixed with the PNW climate should start to show off a headier balance as the Rye cascades down to the bottom Solera, where it is then fractionally blended! Another evolution in the flavor profile that could be even more profound. 

Have you ever had a grip of Jamaican Rum?  You know from the first taste that Jamaican Rum is a beast that separates from every other rum out there.  Well, we love rum here at Docs and batch 21-006 will be the first time our rye finished in Jamaican rum casks has made its way through all three stages of this system.  You should find some more unique ‘funk’ and tropical fruit notes to this glass! Doc’s Alter Ego Triple Cask Bourbon- 21-005 had slightly more oloroso sherry worked in.  Jesse ended up adding in a longer finished/‘concentrate’ that had been aging in Oloroso casks for 9+ months allowing for an extra spice characteristic.  

If you are a fan of sherries, you know that Oloroso brings out much drier stone fruits as opposed to the Pedro Ximenez Sherry which creates a sweeter profile.  21-006 Is going to be a whole new beast.  While the base blend for the bourbon has always been good, Jesse went out and added fuller flavor in the base to allow the Bourbon to stand out even more from this finished product.  This will create a fuller body and balance while allowing the bourbon to shine through all three casks (Cognac, PX Sherry and Oloroso Sherry).  

The goal with Doc’s is to always let the whiskey shine.  While the finishing casks listed above dance across the pallet early, at its soul, this masterfully blended bourbon comes through perfectly
